But you wouldn’t know it. More fun with gin and vinho verde:

  • 50 grams Tanqueray
  • 50 grams vinho verde
  • 5 grams lime juice
  • 15 grams simple syrup
  • 1 splash Angostura bitters
  • 25 grams tonic
Add everything but the tonic to a shaker with ice. Shake. Pour out into a martini glass. Put it back onto the scale and top it off with the tonic.

It tastes like grapefruit, and it isn’t a grapefruit. It’s a gin and tonic and wine. I feel a little bad about the citrus and simple, since that’s the combination you add to a cocktail when you’re trying to cover your sins, but the vinho verde to gin to tonic transitive flavor thing going on is kind of cool. Plus it’s the right color for a grapefruit, tastes like a grapefruit, and is absolutely not a grapefruit.

If I were selling this in a bar I’d probably do some fiddly herb garnish. Sage might go but would be a bit too much. Mint would ruin it. Rosemary would spend all its time tasting like a tree. Maybe I’d rim the glass with pink salt or float a few pink peppercorns in it. Or maybe I’d let someone else worry about garnishes, this is after all taking place in Kevin’s fantasy cocktail bar, Analog, where you check your smartphone at the door.
